Second note about the new drip tray, please be cautious. Any time you have direct access to a fire and fat in your food you run the risk of a flare up. Hi Craig- Happy New Year to you as well! On the sear box, I don’t use it on any setting other than High. When I am searing I am looking for the highest temperature I can get. I’ve used a laser infrared thermometer to measure the surface heat of my sear box grates and after preheating on high it was at 900 degrees F. If I’m looking for a lower temperature, I typically just use the pellet grill side on the highest heat setting.

Words like Grilling, Barbecuing and Smoking are often used interchangeably by us. However, when looking at them from a grill master’s point of view, there are some subtle methodological differences among these three: One is done with the lid up, BBQ is done in a closed circulation with the lid down, and smoking is a slow cooking process in a closed circulation.

When starting on a grilling project, it’s important to know at what temperatures should a food be allowed to settle inside a pellet grill before it reaches its desired doneness. Of course, the time it spends on the grill also plays a major role in it, but you have to understand that cooking on a high heat for long time periods can leave the meat charred while on a low heat can turn it into soft and mushy.
Over time, as other companies started entering the scene, the designs saw some massive improvements. Later, the firepots were brought closer to the hopper, reducing the distance the pellets had to travel to reach it. This move reduced the probability of a pellet jam. Later, more features began to be added to these grills to further improve the reliability, safety, and convenience.
Some other factors that may matter less, but still be important include things such as portability. Some may want to ensure programmable meat probes come standard, while others will want a decent amount of racks. You should also look into direct grilling options available on the unit you are interested in, and inquire about how efficiently the device uses the wood pellets.

As a general rule pellet grills don’t produce heavy smoke regardless of brand. For many people this is a feature. It is easy to have too much smoke. If you want more smoke, get a charcoal grill with wood chunks for flavor. But I happen to like the balance of smoke flavor. Things to check if having problems are pellets, airflow, & proper temperature control. There are other possibilities, but those are the big ones. So far my unit has worked as advertised. The sear box allows a proper reverse sear which allows for more even cooking & a great crust.
