My family and I moved into a new home in December. I own a dozen grills, but the only one I had access to at the new house when we first moved in was my old kettle. It was snowing so of course I was grilling. I slathered some ribs with some jerk seasoning and slapped them on the kettle. I hadn’t cooked on that grill in at least 5 years so I’d forgotten how much I had to fiddle with it. I was so used to setting up the kamado and not having to check on anything except the temp of the meat for the entire cook. Well, I went out to check on my ribs and I had the vents open to much and I burnt them pretty bad. I don’t have the time or inclination to stand over a grill and keep tweaking vents and air flows and adding smoke wood and moving the meat around, etc. When I got my first kamado, I actually missed that aspect, but now my schedule and responsibilities (e.g. my four kids all 8 years and younger) don’t allow me to do that.
2 comments. I am smoking a Brisket using the woodwind for the first time today. It’s 97 Deb outside. I was hoping this grill would hold a tighter temp range. I’m averaging at best 210 to 240 with it set at 225. I dii like a less smokier neat so I didn’t use low smoke. Is \_ 15 deg sound right? Also both temp prope read over 300 and one was in a cold brisket and the other I just left in outside ambient temp. Do you think I have a bad controller?
As a general rule pellet grills don’t produce heavy smoke regardless of brand. For many people this is a feature. It is easy to have too much smoke. If you want more smoke, get a charcoal grill with wood chunks for flavor. But I happen to like the balance of smoke flavor. Things to check if having problems are pellets, airflow, & proper temperature control. There are other possibilities, but those are the big ones. So far my unit has worked as advertised. The sear box allows a proper reverse sear which allows for more even cooking & a great crust.

I bought the Woodwind and can't say enough good about how much I am enjoying it! Big props to whoever engineered this bad boy. Just last weekend alone I made wings, pizza (both a take and bake and one from scratch), ribs for four families and a couple dessert pizzas. The process is so easy and I'm not worried about the results. My neighbor buddies looked on in envy at how sweet of a setup it is!

I id not purchase this item from Amazon, a local retailer had them on sale but none the less this a great smoker at any cost. I have compared it to the far more expensive smokers and I have found that this one has a much stronger, better built main body. The metal is of a heavier gauge of steel. Cheap smokers are separated from more expensive ones a lot by the electronic controls. Tis model has a control from 160 degrees up to 500 in 25 degree increments. It maintains a constant temp within a few degrees of where it has been set, always a problem on other smokers not of the pellet design I have used. Pellet consumption is modest and the Camp Chef brand pellets are the cheapest I have found. and work extremely well The ash cleaning system is a matter of dumping a cup after use with very little ash left over. The grease trap system is perfect. I see no reason to spend more for a pellet smoker that couldn't perform any better than this one. I would recommend it to anyone in the market for one. They are a set it and forget way to do your smoking.
